Steak Sandwich with Sweet & Sour Onions

Grilled steak and sweet-and-sour onions make for a weeknight-friendly dinner that’s a cut above the rest.

Though it’s quick and fairly casual, the flavor of this grilled steak sandwich is nothing short of steak house quality. Start by cooking onions — half sweet, half pungent — in a saucy vinegar mixture for a unique sweet-and-sour flavor. Then move outdoors to grill tri-tip steaks and toast ciabatta bread.

For the best flavor, crush whole spices yourself rather than buying them ground. Don’t have a spice grinder or a mortar and pestle? Use a clean coffee grinder.

Instructions

Preheat grill to medium-high. Brush grill grate with oil.

For the onions, crush coriander and mustard seeds in a spice grinder or with a mortar and pestle.

Purée pimentos and heat in a sauté pan over medium-high. Stir in vinegar, Madeira, sugar, and 2 tsp. spice mixture; bring to a boil.

Add sweet and red onions, cover, and reduce heat to medium-low; simmer onions until soft, about 5 minutes. Uncover, increase heat to high, and continue simmering until liquid is nearly evaporated, 3 minutes. Stir in chives and ½ tsp. salt; season with pepper.

For the steak, mix remaining spice mixture with 1 tsp. salt and ½ tsp. pepper. Place steaks on a sheet of plastic wrap, season both sides of steaks with spice mixture, then top with another sheet of plastic wrap. Pound steaks with a meat mallet to about ½-inch thick.

Grill steaks 23 minutes per side for medium-rare. Grill ciabatta at the same time until toasted, 12 minutes per side. Serve each steak on ciabatta with sweet-andsour onions.

Flavor the sauce for the onions with coriander and mustard, saving the remaining spices for the steaks.

To prevent the mallet from sticking to the meat, place the steaks between sheets of plastic wrap.
