Seared Lamb Chops with tomato & mint slaw

Perfectly seasoned, boldly flavored, and seared to perfection, these tender Lamb Chops from Anne Byrn's Skillet Love are something you’ll want to sink your teeth into. And the accompanying tomato & mint slaw is not only refreshing, it also aids in taming down the heat of the harissa (a dollop of yogurt helps, too). The chops and slaw are not only mouth-wateringly good, they also allow you to get dinner on the table in less than an hour — now that’s a win in our book.

Harissa comes in a sauce, paste, and a seasoning blend made from hot chilies, garlic, and spices.

Instructions

Arrange lamb chops in a single layer in a 9×13-inch glass baking dish. Season lamb chops, on both sides, with garlic, salt, pepper, and harissa.

Heat a 12-inch cast-iron skillet over medium-high until nearly smoking, 34 minutes. Add vegetable oil to skillet; when hot, sear 4 lamb chops at a time until well browned, 34 minutes per side for medium-rare. (Do not move lamb chops while they sear on each side.) With tongs, pick up each lamb chop and sear edges; transfer lamb chops to a plate.

Place tomatoes in a bowl and season with salt and pepper. Add mint leaves and lime juice. Drizzle in olive oil and add pepper flakes; toss to coat.

Garnish lamb chops with mint sprigs. Serve lamb with tomato slaw and a dollop of yogurt.
