Preheat grill or grill pan to medium-high. Brush grill grate with oil.

Brush both sides of pita with 1 Tbsp. oil; season with salt and pepper. Grill pita, covered, until grill marks appear, 1 minute per side; let cool, then cut into croutons.

Whisk together vinegar, remaining 2 Tbsp. oil, honey, Dijon, and garlic for the vinaigrette; season with salt and pepper.

Toss spinach, tomatoes, parsley, onion, feta, and olives with vinaigrette; top salad with croutons.
