To boost the flavor of the chicken, marinate the skewers 30 minutes in the peach nectar used for the glaze, then boil it with other glaze ingredients.

Instructions

Preheat grill to medium. Brush grill grate with oil.

For the glaze, boil nectar, garlic, soy sauce, preserves, Dijon, and pepper flakes in a saucepan. Reduce heat and simmer glaze until reduced by half. Reserve ¼ cup glaze for Trattoria Salad; transfer remaining glaze to a bowl for the skewers.

For the skewers, combine chicken chunks and peach pieces in a bowl; toss with olive oil. Alternately thread chicken and peach pieces onto four skewers; season with salt and black pepper.

Grill skewers, covered, 2 minutes. Turn and grill 2 minutes, brushing several times with glaze. Turn skewers again and grill until chicken is cooked through, 2 minutes more (for a total of 6 minutes), brushing with glaze several more times.

Serve two skewers over each serving of Trattoria Salad.
