This Mediterranean Baked Tilapia is as colorful as it is satisfying. Roasted potatoes and bell peppers combine with the zingy Mediterranean flavors of kalamata olives, capers and goat cheese for an easy, healthy dinner you'll want to make again and again.

Preheat oven to 425°.

Toss potatoes with 1 Tbsp. oil and season with salt and pepper; transfer to a baking sheet and roast 15 minutes. Flip potatoes.

Combine bell pepper, onion, tomatoes, olives, and capers; toss with 1 Tbsp. oil. Spread vegetables on baking sheet with potatoes; roast 15 minutes.

Brush tilapia with remaining 1 Tbsp. oil and season with salt, pepper, and paprika. Place tilapia on top of vegetables on baking sheet and roast 10 minutes more.

Top servings with parsley and goat cheese.
