The size of the short ribs will determine how long they need to cook.

Instructions

Sear ribs in oil in a sauté pan over medium-high heat until browned, about 10 minutes, working in batches if necessary.

Transfer ribs to a 4- to 6-qt. slow cooker.

Combine scallions, ginger, brown sugar, vinegar, Sriracha, molasses, hoisin, lime juice, fennel seeds, and pepper flakes; pour over ribs.

Cover slow cooker and cook ribs until fork-tender on high setting, 4–6 hours, or low setting, 7–9 hours.

Serve ribs with sauce.
