We used a combination of ground sausage and beef, but this sandwich can be made with all sausage, too.

Instructions

Preheat broiler to high with rack 6 inches from element.

Heat 1 Tbsp. oil in a saucepan over medium. Add 1 tsp. garlic and cook until fragrant, 1 minute. Stir in tomato sauce, tomato paste, Italian seasoning, and pepper flakes; bring to a boil. Reduce heat to low and simmer sauce while cooking meat. Season sauce with salt and black pepper before serving.

Meanwhile, heat remaining 1 Tbsp. oil in a sauté pan over medium-high. Add sausage, sirloin, and onion; cook until sausage and sirloin are fully cooked, 10 minutes. Drain off all but 1 Tbsp. drippings. Add remaining 2 tsp. garlic to meat mixture and cook until fragrant, 1 minute; season with salt and pepper.

Divide meat mixture among rolls; top with sauce and mozzarella. Broil grinders until mozzarella melts, about 1 minute; serve warm.
