If you’ve never had a Fried Pickle Dog before, you’re going to be adding it to your “must-have fair foods.” It’s everything one loves in a pickle wrap just dipped in a batter and fried...it’s simply A-mazing.

You can assemble the pickle dogs the day before, but wait to make the batter until you’re ready to fry.

Instructions

Heat 2½–3 inches oil in a large pot (at least 6 inches tall) to 375°. Line a baking sheet with paper towels.

Spread 1–2 Tbsp. cream cheese onto each pickle and wrap with one slice of pastrami; secure pastrami to pickle with a toothpick. Refrigerate until ready to fry.

Whisk together flour, cornstarch, and baking powder in a bowl. When oil reaches 375° add club soda to flour mixture and whisk to combine.

Coat pickle dogs, using a spoon to coat all sides with batter. Carefully drop pickle dogs into hot oil one at a time.

Fry pickle dogs, 2 at a time, until golden, about 2 minutes; transfer to prepared baking sheet. Repeat battering and frying with remaining pickle dogs. Remove toothpick from pickle dogs before serving.
