If you can track down a straight New Mexican chile powder, it's well worth it, but any quality chili powder will give this recipe the right kick.

Instructions

Preheat grill to medium-high. Brush grill grate with oil.

For the mayonnaise, mix together mayonnaise, ketchup, 1 tsp. chili powder, garlic powder, onion powder, and cayenne.

For the chiles, grill chiles over direct heat, covered, turning occasionally until charred on all sides, 810 minutes. Transfer chiles to a bowl, cover with plastic wrap, and steam 510 minutes. Peel, seed, and chop chiles; toss with vinegar and salt.

For the burgers, combine ground chuck, 2 Tbsp. chili powder, cumin, and black pepper. Shape beef mixture into four patties roughly the diameter of the rolls. Season patties with salt.

Grill patties, covered, until edges begin to brown, 45 minutes. Flip patties and grill, covered, 2 minutes more. Top each patty with a slice each of Cheddar and Chihuahua cheese; grill, covered, 23 minutes more. Remove burgers from grill and let rest 23 minutes.

Assemble cheeseburgers on rolls with lettuce, chiles, and seasoned mayonnaise.
