Instructions

Whisk together mayonnaise, zest, lemon juice, oil, and Dijon; season dressing with salt and pepper.

Toss chicken, fennel bulb, apple, scallions, pecans, tarragon, and fennel fronds with dressing; season with salt and pepper.

Serve salad on croissants.
