This Tarragon Chicken Salad is a refreshing take on a traditional chicken salad. Crisp, sweet green grapes and tarragon add freshness to the pasta recipe. The pasta we used was made from lentils, rice, and beets. This complete protein pasta contains all nine essential amino acids.

For more fresh flavor, swap out dried tarragon for fresh. If you’re not a fan of tarragon, use parsley instead.

Instructions

Cook rotini in a pot of boiling salted water according to package directions; drain, then spread on a baking sheet to cool.

Whisk together sour cream, mayonnaise, vinegar, and tarragon for the dressing; season with salt and pepper.

Toss together rotini, dressing, chicken, grapes, scallions, and almonds; season with salt and pepper.
