Instructions

Mince chickpeas and garlic in a food processor. Add avocado, parsley, lime juice, and oil; process until smooth, 12 minutes, then season with salt and pepper

Spread avocado hummus onto one side of each slice of bread. Divide cucumber, tomato, carrot, shallots, and sprouts between two slices of bread (hummus sides); top with remaining 2 bread slices (hummus sides in).
