Cherry preserves are just the right balance of sweet and tart, and Dijon adds tangy heat, while maple syrup and amaretto make a rich glaze when reduced.

Instructions

Bring ham to room temperature, about 2 hours.

For the glaze, simmer cherry preserves, maple syrup, amaretto, and Dijon in a saucepan over medium-low heat until syrupy, about 25 minutes.

Preheat oven to 300° with rack in bottom third.

For the ham, combine cherry juice and cinnamon stick in a roasting pan. Place ham, cut side down, on a roasting rack set inside roasting pan.

Brush ½ cup glaze on ham; seal pan tightly with foil.

Roast ham 15 minutes per pound (2–2½ hours total). Remove ham from oven; increase temperature to 375°.

Brush ham with ½ cup glaze; return to oven, uncovered, and continue roasting until glaze is set, 2030 minutes more.

Transfer ham to a cutting board, loosely tent with foil, and let rest 15 minutes. Serve ham with remaining glaze.
