Brownies & Peanut Butter Sauce
These decadent, deep chocolate brownies make four servings, just the ticket when a next-day chocolate craving hits — or elegant enough for company!
FOR THE BROWNIES, WHISK:
FOR THE SAUCE, HEAT:
Preheat oven to 350°. Lightly coat four 8-oz. brioche pans or jumbo muffin cups with nonstick spray.
For the brownies, whisk together flour, espresso powder, ¼ tsp. salt, and baking soda in a small bowl.
Combine butter, semisweet chips, sugar, cocoa, and water in a large glass bowl; heat in microwave until melted, 1–2 minutes. Stir in egg and vanilla. Add flour mixture just until incorporated. Gently stir in milk chocolate chips.
Divide batter among prepared brioche cups. Bake brownies until a toothpick inserted in the centers comes out with just a few crumbs, 17–19 minutes. Carefully invert brownies onto serving dishes.
For the sauce, heat cream, peanut butter, and corn syrup in a saucepan over medium-low until melted, stirring constantly; stir in salt. Pour sauce over brownies. Serve brownies with ice cream and chocolate curls, if desired.
