Banana-Spice Muffins with Streusel Topping
Muffins aren’t new to the low-fat scene—every coffee shop has them. These muffins taste great and they're the healthier option when you're craving a sweet pastry. The best part is you can make them all yourself.
FOR THE BATTER, combine:
FOR THE STREUSEL, stir:
Preheat oven to 400°. Line a muffin pan with paper or foil liners, then coat with nonstick spray.
For the batter, combine flour, granulated sugar, cinnamon, baking powder, baking soda, cardamom, nutmeg, and salt in a large bowl.
Whisk together yogurt, banana, egg yolks, and 3 Tbsp. butter in a bowl until smooth, then stir into dry ingredients to combine.
Whip egg whites in a bowl with a hand mixer until stiff peaks form; fold into batter. Fill each well of the muffin tin three-quarters full.
For the streusel, stir walnuts, flour, brown sugar, butter, and cinnamon in a small bowl. Divide evenly among muffins. Bake muffins until a toothpick inserted in the centers comes out clean, about 15–20 minutes. Serve warm.
Gently fold the egg whites into the batter. Overfolding will cause the whites to lose their volumizing effect.
Sprinkle about two teaspoons streusel topping onto each of the muffins before baking.
