Tofu Margherita Pizza Bites

Pizza rolls are easy, go-to snacks with high calorie counts that don’t fill you up. Retool their base and toppings, and they’re nearly guilt-free. Swap tofu for pizza crust and you’ll save calories and carbs. Pressing and roasting the tofu makes every bite crisp.

So the tofu doesn’t just crumble when you slice it and stands up to pressing, be sure to buy the tub labeled extra-firm.


Thinly slice tofu, then cut each slice into two triangles. Place a rack on a baking sheet, top with a kitchen towel, and transfer tofu to towel. Top tofu with another towel and second baking sheet, then weight with cans to press the tofu 30 minutes.

Preheat oven to 450°. Remove cans, baking sheet, towels, and tofu. Spray rack with nonstick spray and return tofu. Roast tofu until dry and crisp, about 25 minutes.

Preheat broiler to high.

Spread 1 tsp. pesto onto each tofu triangle. Sprinkle on mozzarella. Broil tofu until mozzarella melts. Garnish bites with basil.


For the crispest pizza bites, press the tofu to remove excess liquid before roasting.
