Savory Corn Waffles with Spiced Bacon

How do you improve upon perfection? When it comes to a nearly perfect food like bacon, you don’t. Instead, let its flavor shine as the main ingredient in these appetizer-sized savory waffles. Sour cream makes a great dipper.

For waffles as appetizers, use a standard-sized waffle iron. For Belgian-style waffles, increase batter amount to ¼ cup in each section.

Instructions

Cook bacon in a nonstick skillet until crisp. Transfer bacon to a paper-towel-lined plate; reserve drippings. Add brown sugar, chili powder, and black pepper to skillet along with cooked bacon. Cook, stirring, until sugar melts and spices coat bacon.

Preheat waffle iron according to manufacturer’s recommendations.

Stir together cornmeal and beer. Let mixture stand 15 minutes so cornmeal absorbs beer.

Whisk together flour, baking powder, and salt; stir into cornmeal mixture along with spiced bacon, 2 Tbsp. drippings, salsa, and jalapeño.

Pour 1 tsp. bacon drippings into each waffle iron section and heat 1 minute.

Scoop 1 Tbsp. waffle batter onto each iron section and cook until crisp, about 5 minutes; repeat until all batter is cooked.

For the best coating, stir the bacon until the brown sugar melts and the spices cling to the bacon.

To give the waffles a crisp exterior, pour bacon drippings into the iron and heat before adding batter.
