Roasted Pepper Roll-Ups
Easy-going gatherings are inherently a summer thing — a time when small plates and a sipper are all you need. Roasted Pepper Roll-Ups are perfectly tender and creamy bite-sized appetizers.
Char bell peppers over a gas flame, or under the broiler, on all sides, until skins blister and blacken; transfer to a bowl, cover with plastic wrap, and let cool.
Peel skins from peppers, and remove seeds, being careful to keep peppers in one piece; trim ragged edges and reserve for another use. Blot peppers dry.
Combine cheese, buttermilk, parsley, scallion greens, thyme, and zest; season with salt and pepper.
Spread cheese mixture over insides of pepper pieces, then roll up from the short ends. Cut each roll-up into thirds.
