Reuben Hush Puppies Stuffed with Swiss Cheese

With all the flavors of a Reuben sandwich, you’ll be tempted to munch on these appetizers all day long – also perfect as a St. Patrick's Day appetizer or a way to use up leftover corned beef.

A Reuben (corned beef, Swiss, and sauerkraut on rye) is a mighty fine sandwich. But when you don’t have enough corned beef left over for sandwiches, these hush puppies are your ticket.

Just mix the batter together, then stuff a scoopful with a cube of Swiss before frying. Be sure the cheese is fully covered with batter so it doesn’t ooze into the oil. And serve while they’re hot!

HEAT TO 350°:

STUFF WITH AND FRY; SERVE WITH:

Instructions

Combine all ingredients (except oil, cheese, and dressing) in a bowl. Cover and chill batter for 15 minutes.

Heat oil to 350° in a saucepan over medium (oil must be about 3" deep).

Stuff a cube of cheese into 1 T. batter. Fry in oil in batches until brown, crisp, and cooked through, 34 minutes, turning often; drain on paper towels. Serve with dressing for dipping.
