Olive Relish on Focaccia

Authentic muffuletta bread is hard to find, but store-bought focaccia is a great substitute. Toast it, then top it with the relish loaded with briny olives, colorful vegetables, and fresh herbs for an appetizer or side dish that fills out the theme.

Preheat broiler with rack 6-inches from element. Line a baking sheet with foil.

Combine green olives, kalamata olives, celery, carrots, oregano, parsley, 1 Tbsp. oil, vinegar, garlic, and black pepper in a bowl. Cover and chill relish until ready to serve.

Halve focaccia horizontally. Brush one cut half of focaccia with remaining 2 Tbsp. oil; season with salt and pepper. Reserve remaining focaccia half for another use.

Broil focaccia, cut side up, on prepared baking sheet until lightly toasted, 45 minutes. Cut focaccia into wedges and serve with relish.
