Mushroom Turnovers with Ham & Swiss Cheese

Preheat oven to 400°. Line a baking sheet with parchment and coat with nonstick spray.

Heat oil and butter in a skillet over medium-high. Add mushrooms, garlic, and rosemary. Cook until mushrooms release their moisture and it evaporates, 5 minutes. Deglaze skillet with sherry and cook until absorbed; season mushrooms with salt and pepper.

Roll pastry on a floured surface into a 12-inch square, then cut into 4 squares; spread each square with 1 tsp. Dijon mixture.

Combine ham, cheese, scallions, and mushrooms, then arrange 1/2 cup in center of each square.

Brush edges of pastry with egg wash, fold into a triangle, and seal shut using the tines of a fork. Transfer turnovers to prepared baking sheet, brush with more egg wash, and sprinkle with kosher salt.

Bake turnovers until golden and crisp, 1520 minutes; serve with remaining Dijon mixture.
