To add a touch of smoky flavor, swap in some sherry to taste for some of the soaking liquid, when pulsing the paté in the food processor.

Instructions

Soak shiitakes in boiling water for 30 minutes; drain and reserve soaking liquid. Chop shiitakes, discarding any tough stems.

Melt 1 Tbsp. butter in a sauté pan over medium heat. Add cremini and cook until brown and liquid nearly evaporates, about 10 minutes; season with salt and pepper, then transfer to a bowl.

Melt remaining 1 Tbsp. butter in pan; add shallots, thyme, and garlic and cook until shallots are golden brown, about 5 minutes. Return cremini and shiitakes to pan.

Deglaze pan with sherry, scraping up any brown bits. Cook until sherry evaporates. Transfer mushroom mixture to a food processor.

Add cream and 1 Tbsp. reserved soaking liquid to food processor; pulse mushroom mixture until smooth but not completely puréed, adding more soaking liquid, 1 Tbsp. at a time, until reach desired consistency. Season paté with salt and pepper.

Serve paté with crackers.
