Melon & Smoky Speck Bites with Balsamic Reduction

Easy-going gatherings are inherently a summer thing — a time when small plates and a sipper are all you need. Melon & Smoky Speck Bites give a whole new meaning to sweet and smoky. For simplicity, pick just one fruit for this recipe, or for variety, use a medley of fruits.

For the reduction, heat balsamic, honey, and orange peel in a saucepan over medium to a boil. Reduce heat; simmer balsamic until bubbly, thick, and syrupy, 34 minutes. Discard peel.

For the bites, arrange cantaloupe cubes on a platter; top with basil leaves and speck. Skewer bites with toothpicks, then drizzle with desired amount of balsamic reduction; serve immediately.
