Jack Cheese Dip

This ooey-gooey Jack Cheese Dip is so addictive, it will keep you and your guests coming back for more. So be sure to have plenty of chips on hand. Made with creamy Jack cheese (for its wonderful melting ability), charred poblano, sweet corn, and Roma tomato, it’s sure to disappear in minutes.

Melt butter in a saucepan over medium heat. Add onion and garlic; sweat, covered, 2 minutes. Stir in flour; cook 1 minute.

Stir in milk, poblano, Roma, and corn; bring to a boil, then reduce heat to medium-low and simmer dip until thickened, 23 minutes. Stir in cheese until melted. Season dip with salt, top with scallions, and serve with chips.
