Heirloom Cherry Tomato Salad with classic hummus

Heirloom tomatoes have more flavor and texture, but shorter shelf lives than typical store-bought tomatoes. The key to revealing the flavor of these gems is minimal cooking. To that end, we’re dishing up a raw salad, bursting with freshness, atop a bed of easy homemade hummus. Simple, healthy and delicious — what more could you ask for?

Test Kitchen Tip

Small tomatoes are snapshots of their bigger cousins, and are a good way to learn about them in a single bite, be they acidic, sweet, or savory.

Purée chickpeas, ice, garlic, tahini, lemon juice, and oil in a high-power blender, such as a Vitamix, or food processor; season with salt and pepper. Spread hummus on a platter.

Combine tomatoes, pine nuts, and basil. Top hummus with tomato mixture and feta; drizzle with oil. Serve hummus with chips, naan, or crackers.
