Goat Cheese & Tomato Tartines

Tartines are open-faced sandwiches that can be topped with just about anything — a classic French appetizer or snack. To make these sandwiches portable, broil the sandwiches ahead, but wait to top them with the salad greens until just before serving.

Preheat broiler to high with rack 6 inches from element. Line a baking sheet with foil.

Arrange bread slices on prepared baking sheet, brush with oil, then broil until toasted.

Spread goat cheese on bread slices; top with tomatoes and broil until cheese softens, 12 minutes.

Toss salad greens with oil and vinegar to coat; season with salt and pepper. Divide salad greens among sandwiches, then quarter each.
