Fried Blue Cheese Stuffed Olives with a martini-inspired aioli are a new take on a classic nosh. And the aioli makes a great sauce for Clams Casino Cakes.

Whisk together mayonnaise, garlic, minced parsley, zest, vermouth, and lemon juice; chill aioli.

Stuff olives with blue cheese.

Pulse panko, chopped parsley, salt, and Italian seasoning in a mini food processor until panko reaches a fine consistency; transfer to a shallow dish. Beat egg in a separate shallow dish.

Dip olives in egg, then dredge in panko mixture, pressing to adhere.

Heat oil in a saucepan to 350°. Line a baking sheet with paper towels.

Fry olives, in two batches, until golden, about 1 minute per batch; transfer to prepared baking sheet. Serve olives warm with aioli.
