We cooked three batches of eight chips at one time using an electric griddle. Depending upon the size of your griddle (or skillet) you may be able to cook more or less at one time.

Instructions

Preheat an electric griddle to 350°.

Combine Gouda, Asiago, and sopressata. Scoop cheese-sopressata mixture onto griddle into eight rounds using a 2 Tbsp. measure for each chip; flatten each slightly. Cook chips until lacy and slightly set, 2 minutes; flip chips and cook until golden and crisp, 12 minutes more.

Transfer chips to a paper towel-lined plate to drain, then transfer to another plate to cool. Wipe griddle clean and repeat procedure in batches until all remaining cheese-sopressata mixture is gone.
