Fondue Fritters with Apple Lambic

The holidays are fast approaching, and this quick and easy appetizer recipe — requiring only a handful of ingredients — gives you every reason to celebrate the season. Inspired by the Swiss specialty, Malakoff, these cheesy apps are the perfect blend of crisp and creamy. A decadent mixture of two cheeses, smoked Gouda and Gruyère, beer, and garlic are scooped onto bread rounds and fried to golden-brown deliciousness. Apple lambic and Granny Smiths complement their richness.

Heat oil in a pot to 350°.

Meanwhile, cut 14 rounds from bread slices using a 1½-inch biscuit cutter; reserve crusts for breadcrumbs. Arrange rounds on a parchment-lined baking sheet.

Toss together Gouda, Gruyère, and flour; transfer to a food processor.

Add lambic, egg, garlic, and nutmeg to processor, season with salt, black pepper, and cayenne, then pulse cheese mixture until paste-like.

Scoop cheese mixture using a level #40 scoop (about 1½ Tbsp.) onto bread rounds.

Fry fritters, 3–4 at a time, on both sides, starting cheese sides down, until golden brown and bread is crisp, about 1 minute per side. Serve fritters immediately with apple slices.
