Copycat Cracker Jack with peanuts
This homemade caramel-popcorn-and-peanuts mix is a golden Cracker Jack copycat. All that’s missing is the little prize at the bottom of the box.
OFF HEAT, WHISK IN:
Preheat oven to 200°. Line two baking sheets with parchment.
Combine popcorn and peanuts in an extra-large bowl.
Melt butter in a saucepan over medium heat. Whisk in brown sugar and corn syrup; bring to a simmer and simmer 5 minutes.
Off heat, whisk in vanilla, baking soda, cumin, cinnamon, and paprika; add to popcorn mixture in batches, stirring after each addition until completely coated. Divide caramel corn between prepared baking sheets.
Bake caramel corn until caramel is dry, 1 hour, stirring every 15 minutes. Let caramel corn cool on baking sheets.
