Pre-shredded cheese may contain anti-caking agents, which can affect melting, so buy blocks of cheese and shred it yourself. Then, to prevent clumping, toss the cheese with a little cornstarch. And make sure the wine or beer is barely simmering when adding the cheese — if it’s boiling, the cheese could curdle, but if it’s not simmering the cheese won’t melt properly

Instructions

Toss together Monterey Jack, Cheddar, and cornstarch.

Heat oil in a large saucepan over medium. Add garlic, cumin, coriander, and oregano; cook until garlic softens, about 1 minute.

Add lager; bring to a simmer. Whisk in cheese mixture a handful at a time, letting each addition fully melt before adding the next. Whisk in chipotles and zest and transfer to a warm fondue pot.
