BLT Nachos with Tomato-Ranch Mayonnaise

These BLT nachos, that serve a crowd, fry up flour tortilla wedges — they’re wildly addictive, and make the perfect neutral chip to build on. Layer tomato-ranch mayonnaise, crisp bacon, and melty Monterey Jack, then top with fresh shredded lettuce, tomato, and avocado. You won’t be able to stop eating this appetizer, it's so good.

Instructions

Preheat oven to 450°. Line a baking sheet with paper towels.

Heat a pot filled halfway with oil to 360°. Fry tortillas in several batches until golden, about 1 minute per batch. Transfer chips to prepared baking sheet; season with salt.

Cook bacon in a sauté pan until crisp; transfer to a paper-towel-lined plate.

Purée mayonnaise, ranch seasoning, and 10 tomatoes in a food processor; transfer to a squeeze bottle.

Assemble nachos by placing half the chips on a baking sheet; top with some tomato-ranch mayonnaise and half of each bacon and cheese. Bake nachos until cheese melts, 3 minutes; top with remaining chips, some mayonnaise, and remaining bacon and cheese. Bake nachos until remaining cheese melts and is bubbly, 3 minutes.

Garnish nachos with lettuce, tomatoes, avocado, and additional mayonnaise.
