Instructions

Cut orange peels with a vegetable peeler (trying not to cut into the white pith). Thinly slice peels with a paring knife and transfer to a saucepan. Remove and discard ends of oranges and pith. Thinly slice oranges into rounds (it’s okay if they break into pieces), discarding any exposed pith and seeds. Add orange slices (or pieces) to saucepan, along with any juice.

Add sugar, water, cardamom, and salt to saucepan; heat over medium-high to a boil until thick and jam-like, 30–35 minutes. Cool marmalade to room temperature 20 minutes; transfer to a container with a tight-fitting lid and chill.

Preheat broiler to high.

Brush oil on one side of baguette slices; season with salt and pepper. Arrange baguette slices on a baking sheet, oiled sides up, and broil until golden brown, 12 minutes; let cool.

Spread goat cheese on crostini; top with marmalade and cilantro.
