Here, diced avocado mixes with cilantro, scallions, lime and garlic and tops crisp grilled bread for an easy bruschetta appetizer. This versatile superfood fruit berry (yup) can also be used in dips, salads, smoothies, and even baked into brownies (just to name a few). Plus, it delivers a whole host of health benefits.
Preheat grill to medium, or preheat broiler to high with rack 6 inches from element.
Combine cilantro, scallions, lime juice, 2 Tbsp. oil, and garlic for the topping; season with salt and pepper, then gently stir in avocado.
Serve topping on baguette slices.
