Asparagus & Ham Tarts

With asparagus, ham, and Gruyere cheese, this savory tart recipe is the ultimate spring appetizer.

When it comes to asparagus, ease of preparation is part of the attraction. And roasting is not only simple, but it emphasizes its nuttiness, deepens its color, and the aroma becomes bold and sweet. These tarts take advantage of the flavor that roasting imparts.

Preheat oven to 400°. Line a baking sheet with parchment paper.

Roll puff pastry into a 16×10-inch rectangle, then cut into thirds lengthwise. Score a ¼-inch border on each piece of pastry with the tip of a knife.

Spread a thin layer of mustard inside border of pastries. Divide ham among pastries, then sprinkle cheese on top of ham.

Arrange 4 asparagus spears in a single layer over each pastry. Brush border of pastries with egg wash. Bake tarts until cheese melts and pastries are golden brown, 15–20 minutes.


To create a puffy border, lightly score around the edges of the pastries, but don’t cut through them.
