All-Purpose Chicken Wings with Three Dipping Sauces

Seasoned with a spice blend, then fried and baked until crisp, these chicken wings are truly fantastic on their own, but serve them with any one of these three sauces for the ultimate appetizer pairing. Nutty Peanut Sauce, classic Blue Cheese Sauce, or spicy Hot Honey Glaze — no matter which sauce you choose (or all three!), you can't go wrong with this classic party food.

These wings come together quickly, but go ahead and combine the herbs and spices, and make whichever sauce a day ahead, so they’re even faster.

DIPPING SAUCES

For the Peanut Sauce, whisk together 1/2 cup crunchy peanut butter, 1/4 cup water, 1 Tbsp. each minced fresh garlic, low-sodium soy sauce, hoisin sauce, brown sugar, fresh lime juice, and fish sauce, and 1 tsp. rice vinegar.

Instructions

Preheat oven to 400°. Place a rack on a baking sheet lined with paper towels.

Combine salt, granulated garlic, coriander, paprika, ancho powder, mustard, cumin, cayenne, oregano, and thyme.

Dust wings with spice mixture, then dredge in flour.

Heat oil in a 10-inch cast-iron deep skillet to 375°. Fry wings, in batches, until golden brown, 5–7 minute per batch. Transfer wings to prepared rack.

Roast wings until crisp, flipping once, 1012 minutes.
