For long, unbroken "noodles," slice zucchini only down to the seeds, then turn to start a new side.

Instructions

Julienne zucchini using a mandoline, a julienne peeler, or by hand.

Heat oil in a nonstick skillet over medium-high. Add zucchini and cook until softened, 23 minutes. Stir in oregano and season with salt and pepper.
