Yogurt Mashed Potatoes
This recipe for Yogurt Mashed Potatoes provide creamy and delicious mashed potatoes without unhealthy amounts of butter.
To test potato for doneness, insert a knife into the center — if the potato slides off the knife, it's done.
Boil potatoes in a pot of salted water until tender, 10–12 minutes. Drain and return to the pot over medium heat to remove excess moisture, about 10 seconds.
Mash potatoes to desired consistency, then stir in yogurt, oil, scallions, and lemon zest. Season with salt.
