For a ta-da presentation, stuff the center of the Crown Roast of Pork with dressing after the roast rests.

Instructions

Preheat oven to 325°. Coat a 7×11-inch baking dish with nonstick spray.

Melt butter in a saucepan over medium-high heat. Add shallots and garlic and sauté until softened, 3 minutes. Stir in wild rice and brown rice and sauté 1 minute. Add broth and bring to a boil. Reduce heat to low, cover, and simmer until wild rice is tender, 30 minutes.

Add sweet potatoes and simmer until fork-tender, 10 minutes more. (Dressing can be refrigerated at this point, and finished the next day.)

Whisk together orange juice, vinegar, honey, and thyme; stir into rice mixture along with apples, pecans, and parsley, then season with salt and pepper. Transfer dressing to prepared dish; bake until rice is browned and top is crisp, 1525 minutes.
