Toast walnuts in a small skillet over medium heat until fragrant, about 6 minutes.

Boil cider, broth, and butter in a saucepan over medium-high heat; add rice. Cover, reduce heat to medium-low, and simmer until liquid is absorbed, 20 minutes. Season rice with salt and pepper and garnish with toasted walnuts.
