Waldorf Salad with Curried Peanuts and Coconut
This sweet-savory side dish shies away from the typical flavors that come with Thanksgiving dinner. Our Waldorf salad recipe has super crisp flavors—perfect for taking a break from all the heavy stuff.
Sauté peanuts and curry powder in oil in a small skillet over medium heat until peanuts are golden, about 2 minutes. Transfer peanuts to a plate to cool.
Whisk together yogurt, sugar, lemon juice, salt, and cayenne in a medium bowl. Stir in apple, grapes, celery, coconut, and peanuts, including any residual oil left on the plate. Chill salad until ready to serve.
