Vegetable & Pita Salad
This delicious veggie salad is a quick side dish to fix on the grill. Serve as a side with any grilled meat or fish, or as a main dish for two, topped with an over-easy egg.
Preheat grill to medium. Brush grill grate with oil.
Whisk together extra-virgin olive oil, lemon juice, oregano, garlic, and honey; season with salt and pepper.
Lightly brush zucchini, bell pepper, onion, and pitas with olive oil; season with salt and pepper.
Grill zucchini, bell pepper, and onion, covered, until crisp-tender, about 3 minutes per side. Grill pitas, covered, until grill marks appear, about 1 minute per side.
Cut vegetables and pitas into bite-sized pieces; toss with some of the vinaigrette and mint
