Tomato Basmati Rice

Fragrant basmati rice is a staple side dish in Indian cuisine, especially when served with something saucy, like this Spiced Creamy Spinach Casserole. The rice catches all the sauce so nothing goes to waste.

Test Kitchen Tip

Traditional to Indian cuisine, fragrant basmati rice is super flavorful, but if you can’t find it use jasmine or plain white rice instead.

Sweat scallion whites, cumin, and coriander in oil in a saucepan over medium-low heat until scallions soften, 5 minutes. Stir in rice to coat with oil and spices.

Add water, increase heat to high, and bring mixture to a boil. Cover pan, reduce heat to low, and simmer rice until tender and liquid is absorbed, 1520 minutes.

Stir in tomatoes and scallion greens. Season rice with salt and pepper.
