Three-Cheese Potato Gratin

If there’s one thing everyone looks forward to at a potluck, it’s the comfort food. And nothing appeals to the masses like the cheesy potatoes featured in this gratin.

Before assembling the gratin, simmer the potato slices in a seasoned mixture of milk and cream. Then transfer the potatoes to a baking dish along with three cheeses — Cheddar, Gruyère, and Parmesan — and pour in that milky sauce. Although the end result is deliciously rich and creamy throughout, the best part is the gratin’s bubbly brown surface after baking.

Preheat oven to 450°. Coat a 2-qt. baking dish and a piece of foil with nonstick spray.

Combine milk, cream, salt, garlic, white pepper, cayenne, and nutmeg in a large saucepan; add potatoes and bring to a boil. Cover pan, reduce heat to low, and simmer 8 minutes.

Toss Cheddar, Gruyère, and Parmesan with flour.

Layer half the potatoes in prepared dish; sprinkle with half the cheese mixture. Add remaining potatoes, pour milk mixture over top, and sprinkle with remaining cheese.

Tightly cover baking dish with prepared foil; bake 30 minutes. Remove foil and bake gratin until brown and bubbly, 20 minutes more. Let gratin rest 1015 minutes before serving.
