Tangy Rice Noodles with Lime Vinaigrette
A side of tangy rice noodles, with plenty of lime and cilantro, is the perfect foil for the heat of the curry. Rice noodles are gluten-free. Their mild taste makes them perfect for soaking up these tangy Thai flavors.
Cook noodles according to package directions; drain, rinse with hot water, drain again, and combine with broccoli slaw and cilantro in a large bowl.
Whisk together lime juice, vinegar, ginger, sugar, fish sauce, and garlic.
Toss vinaigrette with noodles and slaw; season with salt and pepper.
