Sweet Potatoes with Olives

This dish epitomizes the classic combination of sweet and salty. The salty olives are an excellent foil for the sweetness of the potatoes.

Cook sweet potatoes in a large pot of boiling salted water until tender, 10 minutes; drain. Return sweet potatoes to the pot; cook 1 minute to remove excess moisture. Stir in butter and brown sugar until butter melts. Add olives, season with salt and pepper. Serve sweet potatoes with Cuban Flank Steak.
