Spicy Mashed Sweet Potatoes
Sweet potatoes sometimes need a spicy counterpart to balance out the sweetness level. This is an easy side dish to serve with Ropa Vieja Stew.
Cook potatoes in a saucepan of boiling salted water until fork-tender, about 15 minutes. Drain potatoes; return to pan. Cook potatoes over medium heat, stirring, to remove excess moisture, 1–2 minutes.
Add butter, sugar, and minced jalapeño and crush with a potato masher; season with salt and pepper.
