Sour Cream Mashed Potatoes with Peas & Scallions

Cook potatoes in a large pot of boiling salted water until fork-tender, 10–15 minutes. Drain potatoes and return to pot. Cook potatoes over medium-low heat, stirring, to remove excess moisture, 2 minutes.
Add sour cream, milk, and butter, blending with a hand mixer until smooth and butter is melted. Stir in peas and scallions; season with salt and pepper.
