Instructions

Cook potatoes in a large pot of boiling salted water until tender, about 15 minutes. Reserve 1 cup cooking water, then drain potatoes. Return potatoes to pot over medium heat to dry, 1 minute. Remove pot from heat.

Heat oil and garlic in a small skillet over medium-low until garlic is slightly toasted, 810 minutes.

Crush potatoes with a potato masher; gently stir in garlic oil, adding reserved cooking water as needed to loosen. Season potatoes with salt and pepper.
