Smashed Potatoes with Garlic Olive Oil

With only five ingredients — and mostly pantry staples at that — these garlicky smashed potatoes are perfect for soaking up any extra sauce from a dinner, like Pan-Roasted Game Hens with olives and herbs.

White pepper is often used in dishes where black pepper would detract from the look. It’s stronger than black pepper, so use it more sparingly.

Instructions

Cook potatoes in a large pot of boiling salted water until tender, about 15 minutes. Reserve 1 cup cooking water, then drain potatoes. Return potatoes to pot over medium heat to dry, 1 minute. Remove pot from heat.

Heat oil and garlic in a small skillet over medium-low until garlic is slightly toasted, 810 minutes.

Crush potatoes with a potato masher; gently stir in garlic oil, adding reserved cooking water as needed to loosen. Season potatoes with salt and pepper.
