Smashed Potatoes with Bacon

Smashed red potatoes make a perfect side dish for the steak or pork chops. Don’t mash them too much though — the potatoes should have a chunky texture.

Instructions

Cook bacon in a 12-inch cast-iron skillet until crisp. Transfer bacon to a paper-towel-lined plate, drain drippings, and wipe out skillet.

Cook potatoes in same skillet of boiling salted water until fork-tender; drain and return to skillet. Cook potatoes over medium heat, stirring to remove excess moisture, 1 minute.

Stir in cream and butter, crushing potatoes with a potato masher until they reach desired consistency. Stir in chives and bacon; season with salt and pepper.
